I take care of a few close friends of the family and don't want them getting a bill after we find out what insurance has paid. Is there a way/suggestion as to how to stop a statement from printing for them. It'd be nice if there were an option of do not send statements to family or the like or is there an easier way to do it than have my front desk girls remember which names do not get statements?

make a billing type for "Family or NO BILL" and then set them to that type. When you run statements, just include all except that billing type.
