Why a trial version?

I have one question about your distribution model.
If the source code is open why do you give access to the compiled code only as a trial version, i.e. not the most recent version and also limited. is this part of your business model, in order to ensure that sales are not cannibalized or do you have other technical, copyright restrictions?
If I make a website that distributes the up to date unrestricted compiled versions would I break any laws (commercial or moral
) ?
