Is there a way to customise the printing of the Prescriptions to use pages with pre-printed letterheads so that there is an option to choose not to print the name of the practice, address etc. and also to configure the paper size from various options, such as A4 etc.

At the bottom. Those are currently your customization options. Not printing practice info is not yet one of the options. But by using the alignment options, you certainly can make it work for different sizes and orientations of paper.
