So, i am playing around with marvin medicaids chart, having a play
I click the edentulous button, and his teeth all disapear. Fair enough, but lets say i made a misclick
So, i close od, then load it again, and he is still edentulous
I assume that od will always make changes like this, ie that changes are automatically saved prior to od closing?
Is there an undo/redo button /restore to previous time button?

Unfortunately, there is no UNDO/REDO.
There is a Feature Request for it - #155 - that you could vote on. But it only has 1 point and a difficulty level of 9, so there isn't much hope that you'll see it. I think the difficulty has something to do with undoing changes in the database. If you ever worked with programs such as QuickBooks, you'll notice they don't have an UNDO either.

The edentulous change is really easy to undo. Just highlight all the tooth numbers and click Not Missing.
